An early American reference to Groundhog Day can be found in a diary entry, dated February 5, 1841, of Berks County, Pennsylvania storekeeper James Morris:

            "Last Tuesday, the 2nd, was Candlemas day, the day on which, according to the Germans, the Groundhog peeps out of his winter quarters and if he sees his shadow he pops back for another six weeks nap, but if the day be cloudy he remains out, as the weather is to be moderate."

In Scotland the tradition may also derive from an English poem:

 

As the light grows longer ... The cold grows stronger
If Candlemas be fair and bright ... Winter will have another flight

Dear Sisters and Brothers,

            Through the years of its existence, the General Grand Chapter has responded to the devastation caused by floods, earthquakes, tsunamis, and other natural disasters. One of the foremost responsibilities of the Order of the Eastern Star is charity.  Once again we are deeply saddened by the devastating effects of a natural disaster.  On January 12, 2010, an earthquake of the 7.0 magnitude struck near the Haitian capital Port-au-Prince.  This earthquake has left people without the essentials of living – homes, food, clothing and drinking water – as well as the loss of life for over 200,000.  Many disaster response efforts are underway, and according to a press release the total effects of the quake are unknown.

            We, the members of the Order of the Eastern Star, locally and worldwide, are challenged to come to the aid of humanity once again. The General Grand Chapter Elected Officers have received numerous inquiries regarding the collection of donations by Subordinate Chapters and Grand Chapters and the distribution of these donations by General Grand Chapter.  At a recent meeting of the Right Worthy Grand Trustees, a donation of $10,000 from the Beatrix Sweet Fund, a permanent General Grand Chapter Benevolent Fund, was approved and sent to the Clinton-Bush Haiti Fund, a newly formed 501-C-3 organization.

            At this time, the “GGC-OES Haiti Relief Fund for 2010” is being established to collect donations for distribution to recognized reputable 501(c)(3) nongovernmental and nonprofit organizations.  Donations should be made payable to the General Grand Chapter, OES and mailed to the Right Worthy Grand Secretary, 1618 New Hampshire Avenue NW, Washington, DC 20009-2549.

            Your donations will make a significant difference and provide relief to the citizens of Haiti.  Donations to this Haitian Relief Fund may be listed on your Annual Report of Benevolent Donations.  This is an urgent request for immediate relief for the thousands of victims of this disaster.  Your response is prayerfully solicited.

Prayers needed ... PGM Aileen and Don Hedlund...

As dear family members and friends, Derris & I want to let you know what's up with our parents.  Some of you may be aware of some of this information, but everything is summarized here for those who are new to the developments. 

On December 29th Don was admitted to the hospital with excruciating pain, especially in his right hip.  We now know that he has lung cancer which has also metastasized to 3 brain tumors and 2 tumors in the bones of the right hip/pelvis. The cancer in conjunction with advanced osteoporosis caused his right pelvis to pulverize.  He was in & out of the hospital and 2 different nursing homes, resting as comfortably as possible.  Aileen has been staying with Derris in Tacoma.

On Fri 1/22, we were told by one of Don's Doctor's that he had 2 - 4 weeks of life left.  His oncologist would not be specific on time, saying he can't predict accurately & that he believes in miracles, so won't estimate.

Don was moved by ambulance to Derris's home in Tacoma on Saturday, Jan 30th.  We have 24-hr care and hospice for Don.  We are glad Don and Aileen will be together again, they've been married 64.5 yrs!

After Don's death, Aileen will be moving to an assisted living home in Federal Way, WA, not too far from Derris.  Hopefully, Aileen will be able to establish some new routines there fairly quickly and enjoy her new home.

For an indefinite period we will still be maintaining their home in Burien.  Mail sent to that address will get to them, but with some delay.

(1/30)  Richard Tyree, recently appointed Grand Representative of New Mexico, had heart surgery at Swedish on Thursday (January 28th) to repair a valve.  The surgery went great but then in ICU some equipment failed and they lost him for 20 minutes.  They got him revived but he does not recognize the family.  He is to have an MRI and other tests today (January 30th) to make sure there was not any brain damage.  Please keep him and the family in your prayers.  Richard is listed as Marshal of Southgate Chapter in the 2009-10 Blue Book

TO All Washington Grand chapter Sisters and Brothers;  

Our Washington Grand chapter is in need of funds. To help raise these funds, a Grand Chapter Fund Raising      Committee was organized.  

On June Fifth we will have a Washington O.E.S. Fiesta Day. Sisters and Brothers we need your help!
We are asking you to go through your closets and dig out all of the formals, Tuxedos, and street clothes that taking up unwanted space and please get them to one of our committee members or a grand officer.
We do ask that they be clean and in good condition.

All dresses and suits will be sold for Five dollars each. We will also have a penny auction and will be looking for items for this purpose. We are planning a wet sponge toss (at the grand officers of course), Bingo and any other fun things we can come up with by then. We will also have a food kitchen, so you won't go hungry.  

We are asking each Grand officer and their chapter counter parts to be in charge of the various booths. We are hoping that our past Grand Matrons and Patrons will be in charge of either the food or the Penny Auction.  

This years Fun Day will be held at the Mount Vernon Masonic Center in Mount Vernon, We know that this is a bit of a drive for many of you but we need your help, please come and join us in a lot of fun and laughter and help our Grand Chapter at the same time. Make it a, “Week End Get A Way!"  

Mount Vernon Masonic center has plenty of parking and yard space and is all on one level. We will set up on Friday the 4th so please try to have your items to us ahead of time; we will also receive them the day of the sale if you are unable to get them to us ahead of time.

If you need a motel, we have quite a few in the area. I am sure that a number of members in this area would be happy to have over night guests. So please don't let any thing keep you from coming.

Tragedy hits South Carolina...

Harmony Hope 229, D- 11: This is in regards to Lana Griffin, Worthy Matron.  Lana's cousin was on vacation in the Bahamas and was killed in a Scooter-Vehicle accident.  This cousin's husband was severely injured but is now at a son's home with great injuries. Also, Lana's mother fell and broke two ribs and is now at Lana and John's house.  Lt. Col Mike Griffin (Lana's eldest son) is serving his second tour in Afghanistan.

The Passing of:

(1/23)  David passed away this morning (officially at 3 am when the Hospice nurse pronounced him). I don't have to tell you that he fought a hard fight and was courageous to the end, but now he is beyond the realm of pain and suffering, and that should bring each of us who loved him so much the kind of comfort that will sustain us through the days ahead.

Masonic Relations

Well, Masonic Relations committees seem like such a miniscule appointment to the men who receive them -- this is not stated in sarcasm, but usually there are no specific duties attached with this appointment, just suggestions.  My point is this, I have had the misfortune to have belonged to a chapter (not in Texas) where several
of the Blue Lodge were very much opposed to the OES presence in their lodge.  The chapter was a very large one, and the loss (no longer my story to tell) of this fine chapter was a sad occurrence.  I blame no one person, organization or group; many played a part in its demise.  

I am in full agreement that we really need to work on our good relationships with these fine gentlemen.  They have so much fine history and experience in brotherhood and fraternalism, and it is with humility that I am glad to say we have the privilege of being in their lodge building(s).  During my husband's and my last tenure as WM and WP, we had the privilege of having the "grand master elect" and his wife (who is now a state grand line officer) visit.  We had an open meeting and worked hard getting not only our brother Masons and our own members' spouses ('specially those not Masons) but the general public -- the invites went out.  

My computer time is up now -- so need to close, but know I concur that whether we honor them in meeting, feed them a good dinner, join them in a charitable or educational work, or whatever, it is time well spent.

AMEN, Sister!  Well spoken!  Many the times I have hear the grumbling of OES sisters within the Chapter, relating Masonic business that had no bearing on them.  No wonder the men are unhappy with us!  Last Thursday at our Chapter meeting, we decided that we are going to feed the Newport Masons at their first meeting in March ... a Corned Beef and Cabbage dinner!  We are all excited and the Masons are very pleased!  Our Chapter, too, has donated monies for Newport Lodge’s Bikes4Books Program.  We are trying to work together as without the men, we would cease to exist.  Think about it!

The 10 Germiest Places in Your Home

 

1. Kitchen sink, countertop, and sponges:  There are lots of places for germs to hang out in the kitchen, including the drain in your sink (typically home to more than 500,000 bacteria per square inch), the countertop (a welcome mat for food crumbs and meat juices), and the sponges, rags, scrubbers, and towels you use for cleaning (roughly 70% harbor microbes like E. coli, the bacteria responsible for most urinary tract infections). But for every germy hot spot in the kitchen, there’s a smart and simple way to clean up.

Simple Fix: After you rinse or cook food, clean the sink, counters, and faucet with soap and water or an antibacterial cleanser. (Water washes germs away. A cleanser with bleach kills the germs.) It’s tempting to leave your cleaning implement—a damp rag or sponge—hanging around to use the next day, but that could create a germ breeding ground, says Michael G. Schmidt, PhD, professor and vice chairman of the Department of Microbiology and Immunology at the Medical University of South Carolina.

Instead, sanitize your sponge or brush in the dishwasher and your dishrags in the washing machine. To really disinfect the sink and drain, clean them twice a week with a solution of one tablespoon of bleach and one quart of water: scrub the basin, and then pour the solution down the drain.

2. Your cutting boards:  Before you start chopping, it’s wise to make sure you’re 100% up on the danger of food contaminants. Pathogens that can hide in foods like leafy greens, potatoes, and berries—three of the 10 riskiest foods regulated by the Food and Drug Administration (FDA)—are thought to be responsible for 20,000 illnesses since 1990, according to the Center for Science in the Public Interest.

Washing your food before eating removes some germs, of course, and cooking meat kills dangerous bacteria like salmonella. And you probably know it’s smart to chop meats and veggies on separate boards. Still, almost 25% of food-sickness outbreaks are the result of kitchen mistakes, such as using contaminated cutting boards, according to Donna Rosenbaum, executive director of Safe Tables Our Priority, a nonprofit food-safety organization.

Simple fix: After washing all your fruits and veggies well, use your senses to help guide you. “We can’t see microbes but we can sometimes smell and feel them,” Schmidt says. If your food doesn’t smell or feel right, throw it out. As for your cutting board, use glass or plastic, both of which are nonporous and most resistant to germs, says Laura Dellutri of HealthyHousekeeper.com and author of Speed Cleaning 101.

When you’re done with the board, wash it in hot, soapy water, and then spray it with a mixture of one teaspoon of bleach to 16 ounces of water that you keep in a clearly labeled spray bottle, Dellutri says. Finally, rinse the cutting board again with hot water or toss it in the dishwasher. Got a beat-up board? Replace it. Bacteria can hide in a cutting board with lots of knife-cut indentations.

3. Wet laundry:  An icky fact: There’s a tenth of a gram of feces hiding in every pair of underwear, and washing doesn’t always remove it all. That means you can get E. coli on your hands every time you transfer underwear from the washer to the dryer, says Charles Gerba, PhD, a professor of environmental microbiology at the University of Arizona. And a single soiled undergarment can spread those dangerous bacteria to the whole load.

Simple fix: Think 150 degrees, the temperature at which you should run your washer and dryer, to kill bacteria. “Most organisms die in the drying cycle,” Reynolds says. Wash underwear separately, and wash whites with bleach, which kills 99.99% of bugs.

Transfer wet laundry to the dryer quickly so germs don’t multiply; dry for at least 45 minutes (or until the load is fully dry). Wash your hands after doing laundry, and run a cycle of bleach and water after laundering unmentionables to eliminate any lingering germs.

4. Your toothbrush:  The human mouth contains about 100 million microbes per milliliter of saliva, Schmidt says. Those microbes eat the same food you do, and when you brush, food particles and bacteria stick to your toothbrush. The unhappy result: an overgrowth of germs on your brush.

Simple fix: After brushing, rinse your toothbrush with hot water and stand it up in a water glass to air-dry, says Margaret Lewin, MD, a clinical assistant professor of medicine at Cornell University and medical director of the insurance company Cinergy Health. Don’t lay it on the counter, where it can gather other bathroom germs, and don’t store it in a travel case, where bacteria can thrive in the moisture. You can even clean your toothbrush in the dishwasher once in a while.

5. The bathtub/shower:  Every time you take a bath or shower, you remove germs and viruses from your body. That’s the great news. But all the bad stuff doesn’t conveniently slide down the drain or die on the porcelain; some of it thrives if those surfaces stay moist.  In fact, researcher Elizabeth Scott, PhD, co-director of the Center for Hygiene and Health in Home and Community at Simmons College in Boston, found staphylococcus bacteria, a common cause of serious skin infections, in 26% of the tubs she tested, compared with just 6% of garbage cans.

Simple fix: Use a disinfecting cleanser once a week on the bathroom floor and sides of the tub and shower; rinse well and dry the surfaces with a towel. Keep the shower dry on a daily basis by using a squeegee, and disinfect the squeegee weekly, too.

6. Your cell phone and other tech stuff:  The things you touch a zillion times a day—iPhone, BlackBerry, keyboard, computer mouse—are big carriers of germs, including methicillin-resistant Staphylococcus aureus (MRSA) and flu viruses.

Simple fix: Clean the surfaces of your phone or other tech devices with a disinfecting product. Any antibacterial wipe will work; just don’t get your sensitive equipment too wet.

7. Bathroom floor:  Believe it or not, there are more germs on the bathroom floor than on the toilet seat. The problem is flushing, during which microscopic fecal matter is sprayed into the air and lands on the floor, where moisture helps germs grow.

Simple fix: Be sure to close the lid of the toilet before you flush. Also, mop your bathroom floor once a week with a bleach-based cleanser. And clean and dry mats used on your bathroom floor; damp ones help mold and bacteria grow. Hang mats up so they are more likely to dry out between uses, wash them in very hot water weekly, and make sure they’re dry before using them again.

8. Your shoes:  Whatever sticks to your shoes comes into your house—irritating pollen during allergy season, pesticide residue from your lawn, lead-contaminated dust.

Simple fix: It’s easy to keep the germs and yuck outside. Remove your shoes at the door. Wipe your feet on a high-quality, abrasive doormat. (Clean the mat once a week, too.) Also, consider some eco-friendly ways to keep lawn chemicals outdoors. Try organic lawn sprays and other non-chemical options—from aphid-eating ladybugs to heat (electrocution) for termites; they work pretty well and won’t contaminate your home, experts say.

9. The bedroom:  You spend so much time in the bedroom (one-third of your life, actually) that it’s no wonder some germs take up residence there. We all shed dead skin cells on the bedding, floor, or bedside table and sometimes toss sweaty clothes into a hamper instead of right into the wash. It’s pretty rare, but those skin cells may contain staph.

Another potential problem is your damp clothes can grow mold in the hamper. What’s more likely, however, is you’ll be aggravated by dust mites, those critters that love sheets and mattresses—20 million people are allergic to them (signs include itchy eyes, a runny nose, even asthma symptoms like wheezing).

Simple fix: To eliminate dust mites and the dead skin cells they eat, wash bedding in hot water at least once a week. Turn up the water heater to a dust mite–killing 130 degrees before you wash, and turn it back down afterward. And consider using an anti-allergy mattress wrap (several are available at AllergyBuyersClub.com), which can keep mite waste from contaminating your air. Wet-mop the floor and clean surfaces with a germ-killing cleanser. And don’t let damp clothes sit in a hamper longer than a day.

10. Dusty spots:  “In general, dust isn’t filled with germs,” Schmidt says. “It doesn’t have enough moisture.” But dust can cover germy surfaces that should be disinfected regularly—and it may contain chemical residue and insect debris, which can trigger asthma and allergies.

Simple fix: Wet-mop floors at least once a week to keep dust to a minimum. And vacuum smarter with a high-quality unit that has a high-efficiency particulate air (HEPA) filter. Vacuum, not just floors and carpets, but soft furnishings and even counters and bookshelves!  De-cluttering can help, too, Schmidt says: “If you’re into minimalist design, you’ll be less prone to dust.” Follow vacuuming of hard surfaces by cleaning with an antibacterial wipe or spray.

    New Year's Eve was the occasion of the formal ball given by Libby Assembly No. 5, Order of Rainbow for Girls.  Thirty couples of young people enjoyed dancing from 9:30 until 12:30 pausing at midnight to usher in the New Year with noise makers and confetti.

    Miss Gail Guernsey and Miss Jackie Sahr served punch to the dancers during the evening and at midnight a light lunch was served.

Something to Crow About...

    Missouri's WGP, Brother Leonard, has a fun symbol this year. It is the rooster with the slogan "Eastern Star - Something to Crow About".  He had pins made up and gives them to the Sisters and Brothers as he travels the state. I proudly wear mine. On days when I have a Star meeting or other function to attend, I wear my badge, name tag and Past Matron pin at work.  This not only reminds the boss that I need to leave on time, but has prompted others in my building to ask "what is Eastern Star" or "I'm a member but not active."  As a past matron (last year a second time WM) I enjoy traveling to various Star functions and visiting other Chapters.  Not only do I get to spend time with others who have the same interests, but I make new friends around the country.  I even mentioned it to an online friend and he says his wife is a Star member for 26 years and he has just petitioned. So, whether you "crow" or "brag" about being a member, you never know who you will meet where or when that is a member or is interested in becoming a member.

    Our Order is decreasing in membership and we need to grow!  I'm trying to do my part to make that happen.

5 Things You Never Knew Your Cell Phone Could Do

For all the folks with cell phones. (This should be printed and kept in your car, purse, and wallet. Good information to have with you.)   

There are a few things that can be done in times of grave emergencies.  Your mobile phone can actually be a life saver or an emergency tool for survival.  Check out the things that you can do with it:   

§  FIRST:  Emergency ... The Emergency Number worldwide for Mobile is 112. If you find yourself out of the coverage area of your mobile network and there is an Emergency, dial 112 and the mobile will search any existing network to establish the emergency number for you, and interestingly, this number 112 can be dialed even if the keypad is locked. Try it out.   

§  SECOND  ... Have you locked your keys in the car?  Does your car have remote keyless entry? This may come in handy someday. Good reason to own a cell phone:  If you lock your keys in the car and the spare keys are at home, call someone at home on their cell phone from your cell phone. Hold your cell phone about a foot from your car door and have the person at your home press the unlock button, holding it near the mobile phone on their end. Your car will unlock. Saves someone from having to drive your keys to you. Distance is no object. You could be hundreds of miles away, and if you can reach someone who has the other 'remote' for your car, you can unlock the doors (or the trunk).  Editor's Note : It works fine! We tried it out and it unlocked our car over a cell phone!'  

 

§  THIRD:  Hidden Battery Power  ... Imagine your cell battery is very low. To activate, press the keys *3370#. Your cell phone will restart with this reserve and the instrument will show a 50% increase in battery. This reserve will get charged when you charge your cell phone next time.  

§  FOURTH  ... How to disable a STOLEN mobile phone?  To check your Mobile phone's serial number, key in the following Digits on your phone: *#06#. A 15-digit code will appear on the screen. This number is unique to your handset. Write it down and keep it somewhere safe.  When your phone get stolen, you can phone your service provider and give them this code. They will then be able to block your handset so even if the thief changes the SIM card, your phone will be totally useless. You probably won't get your phone back, but at least you know that whoever stole it can't use/sell it either. If everybody does this, there would be no point in people stealing mobile phones.  

§  FIFTH :  Free Directory Service for Cells  ...  Cell phone companies are charging us $1.00 to $1.75 or more for 411 information calls when they don't have to. Most of us do not carry a telephone directory in our vehicle, which makes this situation even more of a problem. When you need to use the 411 information option, simply dial: (800)FREE411, or (800) 373-3411 without incurring any charge at all. Program this into your cell phone now. Yesterday, Today and Tomorrow

 

            There are two days in every week about which we should not worry, two days which should be kept free from fear and apprehension.  One of those days is yesterday with its mistakes and pains.  Yesterday has passed forever beyond our control.

            All the money in the world cannot bring back yesterday.  We cannot undo a single act we performed.  We cannot erase a single word we said.

            Yesterday is gone!

            The other word that we should not worry about is tomorrow with its possible adversities, its burden, its large promise, and poor performance.  Tomorrow is also beyond our immediate control.

            Tomorrow’s sun will rise, either in splendor or behind mask of clouds – but it will rise.  Until it does, we have no stake in tomorrow, for it is yet unborn.

            This leaves only one day – today!

            Any person can fight the battles of just one day.  It is only when you add the burdens of those two awful eternities – yesterday and tomorrow – that we break down.

            It is not the experience of today that drives people mad; it is the remorse or bitterness for something which happened yesterday and the dread of what tomorrow will bring.

            Therefore, by the grace of God, live one day at a time!

§  Thursday was Helen Anderson's memorial.  There were 17 past Grand and 1 present GRM present.  The Past Grands put on the Amaranth memorial ceremony. It was a very nice ceremony and nice to see so many Past grands although not for the circumstances.

§  Sad news to report:  (An official notice will go out next week.)  I have received news that Helen Anderson, PGRM passed away Monday evening January 18, 2010. Her services will be on January 28, 2010 at 2 p.m.   The services will be held at Wiggins & Sons, 2003 N W 57th St, Seattle WA, that is in the Ballard area of the city. Her son is Bruce Gunnels and cards can be sent to P O Box 2069, Kirkland, WA 98083.  Donations can be made to Shriners Children’s Hospitals or you favorite charity.

o    Located in Alexandria, VA.

o    The Memorial is the only National Masonic Memorial in the country.

o    The Memorial is entirely privately funded and is owned by America’s Freemasons.

o    The Memorial is governed by a 21-member Board of Directors comprised of Grand Masters and Past Grand Masters representing the 50 states, Puerto Rico, and the District of Columbia.  (MW Al Jorgensen served on this Board!)

o    The Memorial was patterned after the lighthouse of Alexandria, Egypt, one of the ancient Seven Wonders of the World.

o    The Memorial stands 333 feet tall.

o    The Memorial is located on land once proposed as an ideal site for the United States Capital.

o    The first meeting of the George Washington Masonic National Memorial Association was held at Alexandria-Washington Lodge No. 22 above Alexandria City Hall on February 22, 1910. 

o    The Memorial Hall is the main entrance of the Memorial.  It features eight green granite columns 40 feet high and more than 4 feet wide.  A marble floor, elaborate painted ceiling, and two magnificent murals by artist Allyn Cox encase the room.  At the end of the Hall in a rounded niche is a 17-foot bronze statue of Washington by sculptor Bryant Baker.

Jacques DeMolay was the Grand Master of the Knights Templar at the time of their suppression by Pope Clement V.  He was elected Grand Master in 12078 and suffered martyrdom on March 18th, 1314 with the three principal dignitaries of the order.  Fifty four Knights had suffered the same fate years earlier on Friday, the 13th, 1307!

HANDY HINTS

§  Hint #1:  When that box of baking soda has absorbed as many fridge odors as it can, save it for bathroom cleanups. The granules still have scrubbing power that you can use to make your porcelain shine.

§  Hint #2:  Stash plastic grocery bags in a tissue box! The empty pop-up container makes a convenient storage solution that'll have you doing double recycling duty.

§  Hint #3:  Cleaning your shower liner is easy. Soap film is the most likely cause of stain on your shower liner. Place several large bath towels in the washing machine along with the liner. Add half a cup of vinegar. Remove curtain before spin cycle and hang immediately.

§  Hint #4:  Never throw old shower liners away! You may not want to hang that grimy, old liner in your shower anymore, but I guarantee you will eventually find a use for a nice, big sheet of heavy duty plastic, which is really all a shower-liner is.

§  Hint #5:  Dilute 3/4 cup chlorine bleach in 1 gal of water. Apply to tile and grout and scrub; wipe shower stall and curtain; rinse thoroughly.

§  Hint #6:  Mix 1 part laundry detergent, 1 part hydrogen peroxide, and 1 part water in a spray bottle. Spray stains and rub material together or scrub with a soft brush if needed.

My Grandpa and Grandma were sitting on their porch swing enjoying the nice evening breeze, when Grandpa lovingly leaned over and said, "Hey Ma, I'm gonna have some ice cream, would you like some?"

RECIPES  

 

Pulled Pork & Pineapple Pizza

Need a new pizza idea? Try this sweet and saucy Pulled Pork and Pineapple Pizza; your family will be glad you did.

 

12 RHODES brand Dinner Rolls or 8 RHODES brand TEXAS Rolls, thawed and risen

1/2 medium yellow onion

2 tablespoons butter

1 teaspoon sugar

18 oz ready to eat pulled barbecue pork (such as Lloyd's or Curly's)

8 oz grated mozzarella cheese

8 oz can pineapple tidbits, drained and juice reserved

 

Spray counter lightly with non-stick cooking spray. Combine dinner rolls or Texas rolls into a ball and roll into an 11x17-inch rectangle. Place on a sprayed 11x17-inch baking pan, building up edges slightly. Poke several times with a fork and pre-bake at 350°F for 10-15 minutes. Remove from oven to cool. In a small skillet, bring juice drained from pineapple to a low boil. Boil until reduced to about 2 tablespoons. Melt the butter into the juice. Add the sugar and stir until dissolved. Slice the onion into thin slices. Add to the pineapple mixture and sauté, stirring frequently, until the onions just begin to turn golden. Remove from heat and set aside. Spread your pre-baked crust with the pork. Sprinkle evenly with the cheese, sautéed onions and pineapple. Bake at 350°F for 15-20 minutes or until cheese is nicely melted

Oven-Baked Catfish
from Campbell's Kitchen

 

1 cup Pepperidge Farm® Corn Bread Stuffing, crushed

1/2 tsp. paprika

4 fresh or thawed frozen catfish fillets (about 1 pound)

1 egg  

2 tbsp. butter;

Creamy ranch salad dressing OR chunky blue cheese salad dressing

 

Stir the stuffing and paprika on a plate.  Beat the egg in a shallow dish with a fork or whisk.  Dip the fish into the egg.  Coat the fish with the stuffing mixture.  Place the fish onto a baking sheet.  Drizzle the fish with the butter.
Bake at 400° for 20 minutes or until the fish flakes easily when tested with a fork.  Serve with the salad dressing for dipping. Serves 4.

Kitchen Clip:   Make this a Cajun feast by adding cayenne pepper to the egg wash. It'll give the fish plenty of kick.

Southwestern Pork Soup

Substitute chicken for pork in this dish, if you prefer. Pink beans are similar to pinto beans, but smaller; if you can't find pink beans, substitute pintos. Add cheddar corn bread and orange slices to round out the meal.

Cooking spray
1 cup pre-chopped onion
2/3 cup pre-chopped green bell pepper
1 tablespoon bottled minced garlic
1 jalapeño pepper, seeded and minced
1 pound pork tenderloin, trimmed and cut into bite-sized pieces
2 cups fat-free, less-sodium chicken broth
2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (15-ounce) can pink beans, rinsed and drained
1 (14-ounce) can diced tomatoes, undrained
2 tablespoons chopped fresh cilantro
1 cup diced avocado

Heat a small nonstick Dutch oven over medium-heat. Coat pan with cooking spray. Add onion, bell pepper, garlic, and jalapeño to pan; sauté for 2 minutes. Add pork; cook 3 minutes. Add broth and next 6 ingredients (through tomatoes); bring to a boil. Partially cover, reduce heat, and simmer 6 minutes or until pork is done, stirring occasionally. Remove from heat, and stir in cilantro. Serve with avocado. Yield:  4 servings (serving size: about 1 3/4 cups soup and 1/4 cup avocado)

Irene’s Goodnights Bunt Cake

Another Fanny Flag

1 package yellow cake mix
1 package instant vanilla pudding mix
3/4 C. butter flavored oil
3/4 c water
4 eggs
1/4 c sugar
1/2 c chopped nuts

Combine cake mix and pudding mix with oil, water and eggs in mixer bowl; beat at medium speed for 8 min. Mix sugar and nuts; sprinkle half of [that mixture into well greased bundt pan. Top with half the cake batter.  Add remaining nut mixture then the rest of the batter. Bake at 350° for 50 min.

Asian Grilled Chicken Rolls
Carrot and zucchini ribbons are too pretty to hide, so they are rolled on the outside of these grilled spirals.

 

Chicken Rolls

12 chicken tenders (about 1 1/2 lb)

1 T. Asian Seasoning Mix

2 T. soy sauce

2 large carrots, peeled

2 medium zucchini

RICE: 

1-1/2 c. uncooked jasmine rice

3 c. water

2 green onions with tops (about ½ c. sliced)

GLAZE:

3 T. honey

2 T. soy sauce

1 T. rice vinegar

1 garlic clove, pressed

1 T. Asian Seasoning Mix

 

Directions:

1.      Prepare grill for direct cooking over medium-high heat. For glaze, whisk together ingredients in Small Batter Bowl. Microwave, uncovered, on HIGH 1-2 minutes until mixture comes to a boil and is slightly thickened. Set glaze aside for serving.

2.     For rolls, flatten chicken to an even ¼-in. thickness using flat side of Meat Tenderizer. Combine chicken tenders, seasoning mix and soy sauce in Stainless (4-qt.) Mixing Bowl; stir to coat.

3.     Cut carrots and zucchini into long ribbons using Vegetable Peeler. For each roll, stack a wide carrot ribbon, zucchini ribbon and chicken tender. Roll up and secure with wooden pick. Repeat with additional carrot and zucchini ribbons and remaining chicken tenders. Spray rolls with vegetable oil using Kitchen Spritzer. Thinly slice remaining carrot and zucchini ribbons crosswise to measure about 1 cup.

4.     For rice, combine rice, water, remaining vegetables and green onions in Rice Cooker Plus. Microwave according to package directions. Meanwhile, grill rolls, chicken end down, 3 minutes or until grill marks appear. Turn over using BBQ Tongs and grill 2-4 minutes or until Pocket Thermometer registers 170°F when inserted into center of each roll through side.

5.     To serve, divide rice among serving plates; top with rolls and drizzle with glaze.

U.S. Diabetic exchanges per serving: 2 starch, 1 fruit, 1 vegetable, 5 low-fat meat (3 carb)
Cook’s Tips: Stack a wide carrot ribbon, then a zucchini ribbon and a chicken tender, then roll it up wide end first and secure with a wooden pick. When grilling, stand rolls up and place them onto the grid of the grill, chicken end down. This prevents the vegetables from sticking to the grill grid and tearing.   

If desired, 1 tsp (5 mL) grated fresh gingerroot and an additional garlic clove, pressed, can be substituted for the Asian Seasoning Mix.

Mexican Corn on the Cob

 

12 ears corn, husks and silk removed

½ cup light mayonnaise

1 cup finely grated cotija or Parmesan cheese, divided

1 tbsp lime juice

1 tsp ground cayenne pepper

¼ cup snipped fresh cilantro

Directions:

1.      Bring 8 qt. (7.6 L) of water to a boil in (12-qt.) Stockpot. Trim ends from ears of corn. Carefully add corn to boiling water. Bring water back to a boil; cover, turn off heat and let stand 10-12 minutes. (Corn can be held in Stockpot until ready to serve.)

2.     Meanwhile, in small bowl, combine mayonnaise, 1/2 cup of the cheese, lime juice and cayenne pepper. Combine remaining cheese and cilantro in shallow dish. Spread about 1 tbsp of the mayonnaise mixture onto each ear. Roll coated corn in cheese and cilantro mixture. Serve immediately.

Yield: 12 servings

*        To Cut Summer Energy Costs:  Get fans! Did you know that a large window fan uses much less energy and costs significantly less as an air conditioner to operate? Putting a fan in an attic window pushes hot air out and then draws cooler air in downstairs windows.

*        Keeping Raw Onions Crisp:  The day before you need to use them, cut onions into slices and place in a glass jar with cold water. Cover and refrigerate. If you want to lessen the potency of the onions, change the water at least once. Dry on paper towels before putting on burgers on in salads.

*        Don't Throw Out Stale Bread:  Instead, soft sliced bread can be put into greased muffin cups. Bake until toasty and use as a crunchy egg cup.

*        Have Bumper Crop of Zucchini?  Can't eat all the zucchini that your garden has provided? Don't toss out! Instead, grate it in a food processor and put this pulp into freezer bags. Then you can pull it out to make zucchini bread or other recipes during the rest of the year.

 


 

AND A WORD FROM YOURS TRULY 

Same-oh; same-oh from this neck of the woods!  We had a bit of snow yesterday morning and again this morning and it sure wasn’t anything to write home about!  I think my winter is in the northeast!  Ted said that he would gladly send me to get some!  Hmmm!  I wonder what he meant by that!!!  The groundhog apparently seen its shadow today ... so six more weeks of this ho-hum weather?  L

            And again I am running behind.  I really got myself excited when I ‘typed’ that I was to serve last evening at Bethlehem Chapter.  Out of sight ... out of mind, apparently!  I made Diane Gerking’s ‘Pink Fluff’ and everyone seemed to enjoy it!  Ted and I served this past Thursday at Zillah Chapter.  Since it was Western Night, we served chili dogs, onions, cheese, etc.  I hope that everyone wasn’t up all night with the indigestion!  But they seemed to have enjoyed it although one of our members ended up in the hospital the next day!  Sure hope it wasn’t from that!  I decided that I wouldn’t be doing the chili dogs for last night’s meeting as we have to tote the vittles UP THOSE MANY stairs ... so I knew whatever I would be serving, it had to be LIGHT!  I am sure happy that the Masons decided that they didn’t have to be in the second story of buildings any longer.  I wonder when they started to build their lodge halls on the ground floor.  Those stairs get steeper every year.  Thankfully, Newport Lodge is located on the ground floor!  We are truly blessed! 

            Ted and I took Child #3 (Teresa) and #4 (Chris) to lunch at the Casino today.  Those kids are so much fun!   Remember the times when daddy threatened to stop the car and take care of the problem that was happening in the back seat?  I personally would rather have laughter than crying and complaining!!! 

#1 son (Brad) is still in Hawaii ... getting mighty ‘antsy’ to come home, however, as has been over there 3 weeks already!  Brad and Shardell purchased a Condo several years ago and last year; the one next to them came up for sale, so their son (our only grandson) purchased it!  He has spent his two weeks over there and is now back at work!  I love Hawaii but every time I think of that LONG trip over and back, I shake my head.  It is a long ways to fall, boy howdy!  We are definitely going next year ... and perhaps the following year!  We have fun! 

            Guess who I saw today?  Leslie Green!!!  She and her mom were shopping in Michaels ... and I had gone in to get a painting that we had reframed.  Once upon a time, it hung in our living room ... and the little screws in the back holding the wire came loose and kerplunk!  Down behind the sofa it fell.  Luckily, the only thing that needed replaced was just the frame ... as the glass, mat, painting, etc. were fine!  Now to get it hung! 

            Tomorrow is our Chapter’s Past Matrons get-together!  That is more fun!  We have our lunch catered.  Real spoiled, we are!!!
