    Tuesday afternoon while we were having dinner with Grand Master Chuck McQuery, he mentioned that Monday evening when he was at the Grandview Lodge meeting, Grand Master Chuck was beginning to close lodge, the Tyler grew faint, sat down, and passed away. The Tyler that evening at Grandview Lodge was our Brother Don Standlee.  God rest his soul.

Sadness ...
    Connie:  My mother, Carma Bell PM passed away Monday afternoon (3/12/2007).   Please let our brothers and sisters know.  Mama’s Celebration of Life will be held at the Auburn Masonic Hall (King Solomon Lodge) on April 21, 2007, at 3 PM.  Tyee Chapter will be providing a reception following our service.  Mama joined OES in Southern California (San Fernando Chapter No. 398) 50 years ago this year.  We are very grateful to Highline Home Health and Hospice for all of their loving support.  Mama had congestive heart failure and some other difficulties.  The past six months she has fought a difficult battle and was just plain tired of it.  She was at home with her family where she wanted to be and that was a real privilege for me to be able to be her caregiver these past months.  We would like donations to go to Highline Home Health and Hospice in lieu of flowers.  Anyone interested in doing so may call me at 206-679-3984 or 206-878-1102 for more information.  Our address is 1203 South 248th Street, Des Moines, WA 98198.

    It is with great sadness that I report the passing of Thomas Steele, PGP of Arizona. Tom was PGP in 1985 - 1986 serving with Joan Lopshire. Tom was a member of Sunnyslope #47 and was loved for his wisdom, wit and intelligence and he will be greatly missed by all of us.

WGP Neil McGill's Graveside Services in Manhattan -
All Brothers and Sisters and friends of our WGP Neil McGill....
    Yesterday, Saturday March 10, 2007, I attended the Masonic Ceremony as our honored Worthy Grand Patron was laid to rest in Manhattan, Montana.  I was fortunate in being able to travel there with the Matron and Patron of Missoula's Electa Chapter No. 7,  Sister Velma Cameron and Brother Chuck Allen and his wife Sister Andrea Allen.  It was a lovely sunny ride down and the small cemetery is exceptionally beautiful.  There were many Masons, Stars and friends in attendance and the Masonic ritualistic work was with great feeling.  I heard something else that afternoon.  We were all standing by the gravesite visiting with each other before the service began.  The Masons gathered together and began their work and suddenly, from one of the great Pine trees close by came the most beautiful singing of at least four or five birds.  I think they were Finches, but I couldn't see them.  They sang thru the entire ceremony and only stopped when it was completed.  I was in awe that such a wonderful chorus of singing came from one of the trees that was part of our Worthy Grand Patron's past work in Forestry and I considered it a blessing from our Lord.  When the songbirds ceased singing, the pipes began to play.  I was truly comforted and I hope others were also.  We were invited to a very nice reception in the Masonic Hall with everyone and the food was, as always at Star gatherings, very good.  We had a beautiful, sunny ride home.  My heart was healed that afternoon and I hope there were others that heard the joy in the songs from one of our Lord's gifts to us.

History of Montana WGM's/WGP's Passing Away While in Office -
    I have had some inquiries asking if either a Worthy Grand Matron or Worthy Grand Patron had ever passed away while in office.  So I went to the Montana History Book and found the following:
    Grand Patron Thomas G. Matthews passed away while in office shortly after he was installed on November 9, 1903.  Past Grand Matron Marion Wood passed away March 3, 1904.  This was the first loss of a Grand Officer or Past Grand Officer.
     Worthy Grand Patron Ernest L. Marvin passed away while in office in 1942.
     Associate Grand Patron Luther Hauberg passed away while in office in 1951.
     Harry Cooley, in 1970, was too ill to attend Grand Chapter.
     Worthy Grand Matrons have been hardier than the Worthy Grand Patrons.  None have passed away while in office and the only WGM who was too ill to attend Grand Chapter was Elizabeth Woody in 1909.

    A memorial service for Sister Patsy Taylor, PGM of Oregon, will be held at the Musselshell Community Church in Musselshell, Montana, on Friday, March 23, 2007, at 2:00 PM.  There are no Eastern Star Services as far as we know.  She has been cremated and burial was not discussed.
    No address is needed for the Church as Musselshell is just a wide spot in the county road.

Food Handlers Class
Dear members of the Masonic Family,
    On Sunday April 15th Following the King Solomon's Lodge Breakfast I will be conducting a food class for all that may be in need of updating their food cards or in need of a food card to work at one of the Sporting or public events this coming season.  The Class will take place starting about noon so come for breakfast, enjoy the fellowship, and take the food card class.  In other words make it a day of Masonic Family Fellowship.  The class will take about 1 hour and I recommend even members of the youth groups participate.  For those under 14 I recommend that they watch the video if they will be serving food at one of the Masonic functions.

    I should be re-certified by the end of this month to also teach the alcohol Servers class.  This class, with the video, questions, and test takes about 3 to 4 hours.  My goal is to be sure all the Masonic Bodies that have public events are in compliance with state law and understand what can happen if they blink one time when serving the public, even at a private function.

The Trouble Tree ...

    I hired a plumber to help me restore an old farmhouse, and after he had just finished a rough first day on the job:  a flat tire made him lose an hour of work, his electric drill quit and his ancient one ton truck refused to start. 

    While I drove him home, he sat in stony silence. On arriving, he invited me in to meet his family. As we walked toward the front door, he paused briefly at a small tree, touching the tips of the branches with both hands. 

    When opening the door, he underwent an amazing transformation.  His face was wreathed in smiles and he hugged his two small children and gave his wife a kiss. 

    Afterward he walked me to the car. We passed the tree and my curiosity got the better of me. I asked him about what I had seen him do earlier. "Oh, that's my trouble tree," he replied "I know I can't help having troubles on the job, but one thing's for sure, those troubles don't belong in the house with my wife and the children... So I just hang them up on the tree every night when I come home and ask God to take care of them. Then in the morning I pick them up again." "Funny

thing is,” he smiled," when I come out in the morning to pick 'em up, there aren't nearly as many as I remember hanging up the night before."

Dog Saved by CPR
      CHICAGO, Mar. 12, 2007 (Reuters) -- If a dog is man's best friend, a disabled U.S. Air Force veteran showed the feeling is mutual by saving his drowning pet with mouth-to-snout resuscitation and CPR.
      Lucy, a 10-month-old English bulldog, chased ducks into a partly frozen lake near Randy Gurchin's home in Papillion, Nebraska, but quickly became paralyzed in the icy water and briefly went under. The 50 pound dog was unresponsive and had a blue face and bloody foam around its muzzle when Gurchin, who flew combat missions over Iraq and Afghanistan, edged onto the ice. "The ice started to crack under me. I just picked her up," he said. "I thought she was dead."
      But Gurchin, 51, put his military first-aid training to use.  He closed Lucy's mouth, put his mouth over her nose and started forcing air into her lungs and pushing on her chest.  Within minutes, the dog began breathing shallowly and was rushed to a nearby veterinarian. Doctors soaked Lucy in warm water, injected steroids and muscle relaxants and put her in an oxygen chamber.  She has since made a full recovery.
      "Our little Lucy is back," said Gurchin's wife Kelley.  Her husband, who retired from the military with a back injury in 2005 and walks with a cane, has vowed not to let the dog out of his sight, she said.  "He would never say he loved her until this rescue mission," she said.

NEWS OF KATIE HOLLAND (Montana)
 
    I am sure that many of you join me in giving this young girl our prayers and best wishes!  I have mentioned her in several STARS ... as her story as touched my heart!  She is the grandniece of PGP Don and AGM Gayle Holland of Montana.  As you remember, Katie, a high school senior, was injured in a horseback arena and had a leg torn off of her body.  She was flown to Seattle.  Prayers are needed!
 
Update on Katie Holland of Montana ...
    Many have asked about our great niece, Katie. This update is as of 3-15-07.
    Katie is off of the ventilator, talking and eating real food.  Everyday seems to bring a new set of problems- low sodium levels or low red blood cell count, etc.  She continues to have surgeries for wound cleaning as the wound is very large.  She is due back in surgery today for more cleaning.  It is Spring break at her school & some friends are visiting Katie today in Seattle.  I'm sure there will be tears as well as joy.
    We know that Katie has come this far through the power of prayer.
    Over 11,000 people have signed her journal!! That is awesome.
    The road ahead is long and will be difficult so please continue your prayers for Katie and her family.  We thank you for the prayers, cards and concern.  You are the BEST!

Emergency Prayer Request for Katie Holland -
    Please send an emergency prayer request: Katie's red blood cell count is very low... she is tired and sleepy as the result of this. The Dr. wants to wait until Monday when Katie again has surgery to administer the blood.  Her nurse wants to do it NOW.  (I'm with the Nurse.)  Pray that her body will manufacture the needed red blood cells.

    Friends all:   It is with a great deal of sadness and a heavy heart that I report that our beloved Carma Bell passed away yesterday (3-12-07) at approximately 4:00 pm at her home.  Her daughter Linda and son-in-law Lenny were at her side.  A Memorial service will be held at a later date with a White Shrine memorial ceremony.  As this is a very busy time for all of us Linda will let us know as soon as she can make arrangements. It was with a great deal of pride that her son-in-law recently became a Master Mason at King Solomon Lodge #60. As members of the Masonic family, please keep Linda and Lenny in your thoughts and prayers as they go through this difficult time.

    First news about Joann Houston.  Her house was broken into while at Oregon Grand Ct.  A call has been received from her that she has gotten some of her things back that were taken in the robbery.  Mainly her lap top and camera.  She has to take the lap top in and see if anything can be retreaved as a lot of the things she had on it were gone.  The most important part is that they know who did the robbery and once they are arrested the police will go thru a storage locker these people have and  she may get more back.  The police said they will be doing jail time. She will let everyone know when she gets her computer working again so people can e-mail her.  She has lost all the addresses she had on the computer. Let's keep her in our thoughts.
    Bernice Wallace as most of you heard at Grand ct. has been diagnosed with breast cancer.  She is in the very early stages so prognosis is good.  She was
due to have a masectomy on Thursday but after a nuclear stress test it has been postponed.  Will let everyone know when she is scheduled for surgery. Please keep her in your thoughts and prayers.
    Also just received from Supreme Sec. that Past Supreme Royal Patron S.K. Don G. Pettit  (1988-89) has died March 19, 2007  he was from Maryland.

National Flood Safety Awareness Week ... March 19-23
 

Washington, D.C. -- The National Oceanic and Atmospheric Administration (NOAA)-sponsored 2007 National Flood Safety Awareness Week, takes place from March 19-23. Within this week, Thursday, March 22 is Flood Insurance Day-the perfect time to remind residents about their flood risks, how to prepare and protect themselves as winter rainy season ends, and spring thaw, snowmelt, and hurricane season begins.
            According to the NOAA National Weather Service's spring predictions, the upper Midwest is currently in the middle of its snowmelt. Warmer than normal temperatures in recent weeks have increased the risk of flooding due to ice jams over portions of the region.
            Flooding is the nation's number one natural disaster, occurring both inland and on the coast. It's important to note that flash floods, inland flooding and seasonal storms flood every region of the country. Twenty to 25 percent of all flood insurance claims are filed in low-to-moderate flood-risk areas.
            Flooding causes damage and destruction across regions nationwide-wiping out homes, businesses and personal financial resources. Property owners and renters need to know that they can take steps to protect their property and financial security before disaster strikes. However, many eligible residents are unaware that they qualify or that affordable flood insurance is available.
           
Residents can begin to take steps now to protect their home and assets from rising floodwaters at any time.
* Reduce your home's flood risk through home maintenance or improvements:
* Make sure gutters and drains are cleared. Clean and maintain storm drains and gutters and remove debris from your property to allow free flow of potential floodwater.
* Move valuables and sentimental items to the highest floor of your home or business.
* Install backflow valves in waste lines to keep water flowing in one direction.
* Protect your well from contamination.
* Anchor or elevate fuel tanks and elevate the main breaker or fuse box and the utility meters above the anticipated flood level in your home or business, so that floodwater won't damage your utilities.
* Make sure you have the right insurance: Review your insurance policies and find out what they do and do not cover. Learn the difference between replacement cost coverage versus standard coverage, which only pays the actual cash value of insured property. Be sure that you have enough insurance to cover recent home renovations or improvements. Know that most homeowners insurance polices do not cover flood damage, so be sure to consider flood insurance for both your structure and its contents. There is typically a 30 day waiting period for a flood insurance policy to take effect.
* Learn your flood risk. Properties that are not located within high-risk areas can also flood. Find out your flood risk right now by entering your address at FloodSmart.gov "Assess Your Risk." Insurance agents can also help check your risk.
* Purchase a flood insurance policy. If you already have a flood policy, remember: your policy needs to be renewed each year.
* More than 20,200 communities in all 50 U.S. states and its territories voluntarily participate in the NFIP, representing about 95 percent of all properties in the nation's high-risk areas.
* Plan for evacuation: Plan and practice a flood evacuation route, ask someone out of state to be your "family contact" in an emergency, and make sure everyone knows the contact's address and phone number.
* Build an emergency supply kit: Food, bottled water, first aid supplies, medicines, and a battery-operated radio should be ready to go when you are.

* Inventory your household possessions: For insurance purposes, be sure to keep a written and visual (i.e., videotaped or photographed) record of all major household items and valuables, even those stored in basements, attics or garages. Create files that include serial numbers and store receipts for major appliances and electronics. Have jewelry and artwork appraised. These documents are critically important when filing insurance claims.
* Protect important financial documents: Store copies of irreplaceable financial and family documents in a safe place, preferably one that is protected from both fire and water. Documents include automobile titles, tax records, stock and bond certificates, deeds, wills, trust agreements, birth and marriage certificates, photos, passports and insurance policies. Keep originals in a rented safe deposit box. And don't forget the household inventory file!
            NOAA's predictions state that portions of eastern South Dakota, eastern Iowa, southeastern Minnesota, southern Wisconsin and northern Illinois are at risk of flooding. In addition, high soil moisture over northeastern Ohio and northwestern Pennsylvania and extreme southwestern New York state could lead to flooding if additional heavy precipitation occurs. Also, there is a flooding potential for southeast Colorado because the soil moisture is high, due to the melting of an above normal snowpack, which resulted from record snowfall in the state in December and January.
            Flood insurance is available through nearly 100 insurance companies in more than 20,200 participating communities nationwide. Everyone can purchase flood insurance - renters, business owners, and homeowners. The average flood insurance policy costs around $500 a year. And in low- to moderate-risk areas, lower-cost Preferred Risk Policies (PRPs) start at just $112 a year. Individuals can learn more about their flood risk and how to protect their property by visiting FloodSmart.gov or by calling 1-800-427-2419.
            FEMA manages federal response and recovery efforts following any national incident. FEMA also initiates mitigation activities, works with state and local emergency managers, and manages the National Flood Insurance Program. FEMA became part of the U.S. Department of Homeland Security on March 1, 2003.

 

    Great advice!  We flooded one time (in the mid 90's) BIG TIME!  Our NEW house had over 6 feet of water in the lower level for 7 weeks!  We DID have the above mentioned Flood Insurance Policy in effect and trust me!  It is renewed every year!  FEMA did pay for all damages INSIDE the house.)  We were lucky as we were able to live in our top level ... and Ted had the foresight to put in two electrical units (one for the top level and one for the lower level).  Worked fine until it came to hot water!  The hot water tank was on the lower level. But that has been modified now!  The electric range was also on the lower level electrical circuit, but an electric skillet worked fine!  Our neighbor needed drinking water as his well was under the flood water so we ran a hose from our well, which was well above the flood area, to his house.  Our telephone unit was under water, so he ran a LONG phone thing-a-bob (the clear wire that plugs into the jack) from his house to ours so we could have a phone and I could have my Internet.  But then ... the water came higher and they had to move out ... but their jack remained above water!  COOL!  And now every year, we worry until all the snow has melted in Montana that runs past the Hungry Horse Dam and out of Flathead Lake!

CARING LIFELINE

      So many people have asked me "Why would you adopt a dog who is blind and deaf?"
      It is hard to explain really, but I will tell you the story of my little Daisy.
      After I got divorced, I moved into an apartment.  I have always been known by my family and friends as an "animal person."  Even as a small child, my playmates were the animals.  I grew up on a farm so there was always an abundance of animals to play with and take care of.  We always had at least one dog in the house and one or more outside dogs.  And of course there were always the barn cats.  My dad always said all the red baby pigs that were born were mine, just because I thought they were so cute.  Of course, they don't stay that way but it was fun while it lasted.
      Anyway, while I was living in my apartment I happened across an ad in a newspaper for a rescue organization called Pet Pals, located in a city not far from me.  I checked the site every now and then, just looking to see what was new and available for adoption.  I saw a small Terrier, who due to gross neglect, was blind and deaf.  The original picture of her made me want to cry, she looked so pitiful. Her hair was so long and she looked like a horrible mess.
      Evidently, a vet had rescued her from a very bad situation and had taken her in to his clinic to try to care for her and help heal her many wounds.  Her eye infection had been let go for so long there was nothing he could do for her eyesight.  They had contacted Pet Pals to see if they could try to find a good and loving home for this aged, abused dog.
      Some time passed and I checked the website again and Daisy was still listed as available. There was something about her sad picture that drew me to her so I made the call to arrange to go see her.
      As soon as I got to the clinic, I knew Daisy was meant to be with me.  I took her immediately home with me and tried to hide her in my apartment until I could talk to my landlord to see if he would allow me to keep her.  There was a "no pet" policy, but they had made an exception for my neighbor to let her have a cat.  At first, they led me to believe that I could keep Daisy, but the next day they changed their minds.
      I had to make the call to the clinic to tell them that I would have to bring Daisy back, and with tears flowing down my face I returned her.  I spoke to the founder of Pet Pals and asked if it would be possible for them to save her for me, as I was bound and determined to be able to give Daisy the loving home she deserved.
      As soon as I got back home, I looked in our local paper for another place to live.  To my surprise there was a duplex available that I would let me have a dog.
      In a matter of two weeks time, I moved all my possessions and went back to collect my little Daisy.  Most people thought I was crazy for doing all this in order to have a pet, but I will go to whatever lengths it takes to make an animal happy.  And they make me just as happy.
      Now, almost four years later, Daisy is still with us along with her other rescued furry sisters, Sandi and Wanda.  Daisy has slowed down quite a bit, but she will continue in our loving home until it is her time to go to the Rainbow Bridge.
      Don't ever look at any animal with any deformities or difficulties as a throw away animal.  They all deserve a loving home while here on this earth.
      Please support your local rescue organizations. They are the lifeline for so many pets who need loving family to give them a second chance.

MASSIVE PET FOOD RECALL
Involves chunks of meat in gravy, sold in cans and pouches  http://www.menufoods.com/recall

      UNION, NJ, Mar. 18, 2007 (AP) -- Menu Foods said Saturday it was recalling dog food sold under 48 brands and cat food sold under 40 brands including Iams, Nutro and Eukanuba.  The food was distributed throughout the United States, Canada and Mexico by major retailers such as Wal-Mart, Kroger and Safeway.
      An unknown number of cats and dogs had suffered kidney failure and about 10 died after eating the affected pet food, the company said.  Meanwhile, two other companies -- Nestle Purina PetCare Co. and Hill's Pet Nutrition Inc. -- announced Saturday night that as a precaution they were voluntarily recalling some products made by Menu Foods.
      A complete list of the recalled products along with product codes, descriptions and production dates was available from the Menu Foods website at: http://www.menufoods.com/recall .
      The company also designated two phone numbers that pet owners could call for information -- 866-463-6738 and 866-895-2708 -- but callers kept the lines busy for much of Saturday.
      Sarah Tuite, a company spokeswoman, has said the recalled products were made using wheat gluten purchased from a new supplier, which has since been dropped for another source.  Wheat gluten is a source of protein.  The recall covers the company's "cuts and gravy" style food, which consists of chunks of meat in gravy, sold in cans and small foil pouches from Dec. 3 to March 6.

MASONIC NEWS
 
Prayers needed ...
    WB Digger O"Dell, Worshipful Master of Garfield Lodge No. 41 suffered a stroke last Wednesday, 14 March.  At the present time, Sunday, he is in the hospital at Coupeville and will be transferred to Bellingham on Tuesday the 20th for therapy.  Please keep him in your prayers.

(3/21)  Most of you know that Digger O"Dell suffered a stroke last Friday.  He was transported to Whidbey General for care and diagnosis.  Yesterday, Tuesday, he was transported to Sacred Heart in Bellingham for therapy and further treatment.
    At present, his left arm is immobile, his left leg has good but limited strength, there is a slight pull on the left side of his face and left eyelid.  His brain is undamaged and his speech is good.
    Prognosis for recovery of use of the left arm is unknown at this time.  His determination is good as there remain fish to be caught.
    I plan to visit him on Thursday.  Keep him in your prayers.

News of the Chips Program
    As for CHIP's we are having the following events:
    Emmanuel Presbyterian Church, 19540 104th Ave, Bothell on May 25th from 3-6 pm which is National Children's Awareness Day.  As of right now, Ashler is
sponsoring the event in partnership with Emmanuel Presbyterian Church of Bothell, Eastside Dental of Redmond, Sullivan-Schein Dental Supply, Bothell Police Dept., Bothell Assembly #47 International Order of the Rainbow for Girls.
    There is an event in Chehalis on the 16th of March at the H&R Block Office in the Safeway Complex on Harrison Ave from 3-6 pm.
    There is one tentatively scheduled for April 7th at the Washington Lodge #4 Easter Egg Hunt, at the Washington Masonic Center, Vancouver, WA
    There is one tentatively scheduled for the 25th of April in Bremmerton,  as yet I don't have the full details on this one.
    There is the Lewis County Youth Fair on the 5th through the 7th at the Lewis County Fairgrounds in Chehalis, WA
    There is an event at Tekoa School in Spokane on the 22nd of May.  Actual physical location and time of event is to be determined.

Rainbow Girls Easter Egg Hunt ..
Dear Friend,
    On Saturday April 7th the Rainbow Girls of Laurel Assembly #144 of the International Order of Rainbow for Girls will be hosting an Easter Egg Hunt
from 10:00 AM to 2:00 PM for all who whish to participate.  This event will be held at the Royal Arch Park located at 20821 Renton-Maple Valley Highway
SE (Highway 169 to the right just before the highway 18 overpass).  As this is a new fundraiser, and the Rainbow Girls of Washington continue to raise
funds for the Burn's rehab unit in Everett, your help in letting people of the community know this event is taking place will be greatly appreciated. Please help by passing the word.  Thank You for all your help.

North Hill Lodge Degrees Conferral

    This Saturday, March 24, 2007 North Hill will confer the Fellowcraft and Master Mason degrees on 3 candidates.
    Lodge will open promptly at 9:00 am however, coffee and donuts will be served at 8:15 am

LOWRY'S HINTS
 
  • HINT 1:  Removing Lipstick:   Remove lipstick from clothes. Rub in a dab of vegetable shortening, then rinse the stained area with club soda. Works Great!   
  • HINT 2:  Remove tar from clothing. Scrape off as much tar as possible, place a lump of shortening over the spot, wait three hours, then wash.
  • HINT 3:  Now that the holidays will be coming, here is a great hint for storing a lot of food in your refrigerator.  Think Square! You'll gain more room in less space with square and rectangular storage containers. Round containers waste more room, in the fridge, freezer and cabinets.   
  • HINT 4:  When a cake recipe calls for flouring the baking pan, use a bit of the dry cake mix instead - no white mess on the outside of the cake.

RECIPES 

 
Cinnamon Bars

1/2 cup butter, softened
1/2 cup margarine, softened
1 cup sugar
1 egg yolk
2 cups sifted flour
1-1/2 tablespoons cinnamon
1 teaspoon salt
1 egg white
1/2 cup chopped walnuts or pecans

TO PREPARE:  Cream the butter, margarine and sugar in a mixer bowl until light and fluffy. Beat in the egg yolk. Stir the flour, cinnamon and salt together. Fold gently into the creamed mixture. Spread in a greased 9x13-inch baking pan. Beat the egg white in a mixer bowl until stiff peaks form. Spread over the batter; sprinkle with the nuts. Bake at 300 degrees for 25 to 30 minutes or until golden brown. Cool in the pan on a wire rack. Cut into bars. SERVES: 48

Beef Taco Skillet
from Campbell's Kitchen

1 lb. ground beef
1 can (10 3/4 oz.) Campbell's(R) Condensed Tomato Soup
1 cup Pace(R) Chunky Salsa
1/2 cup water
8 corn tortillas OR flour tortillas, cut into 1" pieces
1 cup shredded Cheddar cheese

Directions: COOK beef in skillet until browned. Pour off fat.  ADD soup, salsa, water, tortillas and half the cheese. Heat to a boil. Cover and cook over low heat 5 min. or until hot. TOP with remaining cheese. Serves 4.  
TIP: Serve with tossed green salad and some rich chocolate Pepperidge Farm(R) Cookies.
Kitchen Clip:  Leftovers can be reheated and served with tortilla chips and your favorite Southwestern toppings, such as sliced green onions, sliced black olives, prepared guacamole and sour cream.

Salmon Pillows with Basil Cream Sauce

INGREDIENTS FOR BASIL CREAM SAUCE:
1 cup fresh basil, loosely packed
1/4 cup olive oil
1 tablespoon pine nuts
2 cloves garlic
1/4 teaspoon white pepper
1 cup half and half
1/2 cup heavy whipping cream
4 ounces Romano cheese, freshly grated (1 cup)

INGREDIENTS FOR SALMON PILLOWS:
6 ounces smoked salmon, sliced
4 ounces cream cheese, softened
2 teaspoons fresh lemon juice
1/8 teaspoon white pepper
cornstarch
24 won ton wrappers
1 large egg white, beaten
________
chopped red onion
chopped tomatoes
capers

TO PREPARE THE BASIL CREAM SAUCE:  Process basil, olive oil, pine nuts, garlic, and white pepper in a food processor until basil is finely chopped. Combine half and half and whipping cream in a saucepan. Bring to a simmer, but do not boil. Whisk in basil mixture and Romano. Heat until cheese melts. Keep warm.
TO PREPARE THE SALMON PILLOWS:  Process salmon, cream cheese, lemon juice, and white pepper in a food processor. Line a baking sheet with waxed paper and lightly sprinkle with cornstarch. Place 1 rounded teaspoon of salmon mixture in the center of a won ton wrapper. Place on prepared baking sheet and fold in half diagonally, pressing edges to release any air. Brush and seal edges with egg white. Repeat with remaining won tons. Cook in batches in a large pot of boiling water, about 3 minutes. Transfer to serving plate. Top with sauce and garnish with red onion, tomatoes, and capers. YIELDS: 24 pillows

For the Cake:
Nonstick vegetable spray
All-purpose flour, for pans
3 cups self-rising flour
2 cups granulated sugar
3/4 cup vegetable oil
1/2 cup finely chopped pecans
2 very ripe large bananas, mashed
One 8-ounce can crushed pineapple, with juice
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
4 large eggs, beaten
 
For the frosting:
One 1-pound box confectioners' sugar
One 8-ounce package cream cheese, room temperature
6 tablespoons (3/4 stick) unsalted butter, softened
1 teaspoon pure vanilla extract
1 tablespoon milk, or more if needed
1/2 cup finely chopped pecans

1. Preheat oven to 325°. Spray and flour three 8-by-2-inch round cake pans, tapping out excess flour; set aside.
2. Prepare the cake; in a large bowl, stir to combine self-rising flour, sugar, oil, pecans, bananas, pineapple, vanilla, cinnamon, and eggs.
3. Divide batter evenly between prepared pans, smoothing with an offset spatula. Bake, rotating pans halfway through, until the tops spring back when gently pressed with your fingertips, 26 to 28 minutes.
4. Transfer pans to a wire rack to cool 10 minutes. Invert cakes onto wire rack. Re-invert cakes and let them cool completely, top sides up.
5. Prepare the frosting; in the bowl of an electric mixer fitted with the paddle attachment, combine sugar, cream cheese, butter, vanilla, and 1 tablespoon milk on medium speed until frosting is smooth. If needed, add more milk, 1 teaspoon at a time, to achieve the proper spreading consistency.
6. Using a serrated knife, trim tops of cakes to make level. Place four strips of parchment paper around perimeter of a serving plate or lazy Susan. Place the first layer on the cake plate. Spread the top of the first layer with 1/4 of the frosting. Place the second layer on top and repeat process with another 1/4 of the frosting. Place the remaining layer on top of the second layer bottom side up. Spread entire cake with remaining frosting. Sprinkle the top with pecans. Remove parchment paper strips; refrigerate until ready to serve.   Serves 12

  • High-Tech Equipment Acting Up? If your computer, hard-disk drive or printer seems to be operating sluggishly, use the utilities provided. Check the troubleshooting sections of operating manuals or the installed software to make sure you are maintaining the programs and your equipment properly.

  • Bed Pillows Need to be Freshened Up? Put them into the dryer (on the air cycle) with a fabric-softener sheet for about 20 minutes to fluff them up. They will smell fresher.

  • Temporary Bedside Table:  If you have a sick family member who's staying in bed, he or she may need more room to store medicines and other items near the bed. Use an adjustable ironing board that you can place perpendicular to it. The legs can slide under the bed. Cover the board with a tablecloth or plastic sheet.

  • Make Your Own Café Olé:  For one cup of cool, brewed regular coffee, use skim milk and a tablespoon of powdered skim milk. Then add artificial sweetener or sugar. Pour mixture into the blender and run until foamy. Then put into a microwavable mug and heat on warm for several seconds.
