WHAT IS A FRIEND?

  • A friend is someone you can call at 8:30 on Monday morning to say you are dropping off your St.Bernard in about ten minutes. She will say okay, and never ask why.
  • A friend is someone you hope will be at the next bridge club meeting, because it's always more fun when she's there.
  • A friend is someone who meets your eye and laughs at the same time you do. And no one else can understand just what is so funny.
  • A friend is someone who will ask your advice, and sometimes even take it.
  • A friend can make you feel like Julia Child at your own dinner party, even though the only thing you ever serve is Chicken and Broccoli Delight.
  • A friend will lend you her silk evening wrap, and not even tell you to guard it with your life.
  • A friend won't think you're terrible if you tell her you once threw your wedding ring at your husband. If your husband threw it back, she won't think he's terrible either.
  • A friend is someone who brings her own glass of iced tea to your patio because she can't stand your coffee.
  • A friend listens to what you say, and also hears the message underneath the words.
  • A friend will tell you about the spiders in her house, so you can tell her about the mouse in yours.
  • She knows her children aren't perfect, and doesn't care if you know it too. She understands and accepts you just the way you are, but is loyal enough to tell you when you're behaving like a child. Best of all, you can tell her to go home.

Prayers needed ...
    Ted and I received a letter several days ago from Brother Jim Bayley, PP, Pine Tree Chapter, Kettle Falls.  I am sure that most in our area know him by his birdhouses.  Jim suffered a stroke many years ago, leaving him, in essence, speechless, and without the use of his right arm, but the one thing he could do to make ends meet is to make bird houses and that he does ... by the thousands, by now, I am sure!  Anyway, his letter was about the condition of his beloved wife and our Sister, Lasca, PM, Pine Tree Chapter.
    And I quote ... 'The lump came back in her neck, so they did Chemo, the result of that caused her blood sugar to go high and her blood pressure go high.  That was on September 3rd.  On September 4th, they lifebirded her to Sacred Heart Hospital in Spokane.  She is still there and will be for awhile.  They had to put her on Dialysis one time.  She has been in Intensive Care and out now in Room 754 and we hope on the mend.  Lasca's daughter, Susan Johnson is with her every day.  If you would like to send a card to Lasca ...

Hi everyone,
    Here is an update on Gary's prostrate surgery yesterday:
    All went well. It was a 2 1/2-hour surgery and 5-hour recovery, partly because of the unavailability of a room! (Egad!)
    They removed the whole prostate and some glands which they are checking for cancer. He's experiencing some of the normal nuisance "hurts," of course, where they removed the tube from the throat, etc., but it looks like all things went well. He hopes to come home either Friday or Saturday.
 
    Keep Gary and Pat in your prayers, as I know you all will.

Associate Grand Patron Has Surgery - (8/22)
    Just a note to let everyone know our Associate Grand Patron, Boyd Mason, took a little time off for some surgery.  Last report (about 6:30 this Wednesday evening) is that he’s doing fine and hopes to be home tomorrow (Thursday).  I’m not sure whether the Dr. and wife Karen have signed off on that but we wish him a speedy recovery.  It sounds as if he’ll be home soon, so cards and well wishes should probably be sent to his home address.  You can send prayers anytime!!

Sadness ...
    Could you please put in the next Stars of Washington about Grandma (Lucille Evans). She passed away on August 22nd.  We are having her memorial service
on September 22nd at 11 am - at Community of Christ Church - 11515 E Broadway, Spokane Valley, WA 99206.  Spokane Chapter will also be conducting the Eastern Star funeral service.
    Grandma always loved Eastern Star and the many friends she made.  She was 94 and we are thankful that we had her with us as long as we did.  Thanks
to all for their kind thoughts and condolences.

    We want to thank all for their cards, phone calls, and encouraging hugs along the way.  Jack Swartz, is slowly improving after the heart surgery and pneumonia.  He sees the Heart surgeon on Thursday and will be deciding when it will be best to repair the blockage on the left side of his heart.  He has good days and not so good days but still no smoking!

Loss of a wonderful member ...
    Dear Connie,
        The Amaranth Court Tom and I belong to has lost a wonderful member--Honored Lady Lillian Cook.  We had just celebrated her 99th birthday on August 15th, and she recently suffered a stroke and was left in a coma.  She passed away last Tuesday morning.
    For those knowing the Cooks, cards may be mailed to Gene Cook and their family at 214 W. 6th Ave., Apt. 301, Spokane, WA  99204-2437.
    The Cooks attended Idaho's Grand Chapter the year it was held in Sun Valley, and Lillian was honored at that time as a 77-year member of Eastern Star!    She was one special lady!  Originally from Idaho, Lillian was very active in Star over the many years she was a member.  And, lof course, she and Gene were always active in Amaranth also.

Salmon dinner ...
    The annual Greenwood Chapter Salmon Dinner is slated for September 30th, from 1 to 4 pm so get your appetites ready.  The price is  a very reasonable $10.00  per person.   It's a major fund raiser for the Chapter and always a great meal and an afternoon of fellowship.  We hope to see a houseful at the Salmon Bar-B-Q.

    Just received word that H.L. Lillian Cook died at 11:30 am today. No word on services yet.
    S.K. Woody Esterly will have by-pass surgery on Friday morning as long as the fluid in his body is less. Please keep positive thoughts and prayers.
    Also just a reminder that if you have any Grand Ct. by-law amendments that they are due on my desk signed and ready by Nov. 1st.

1. Woody Esterly - S.K. Woody Esterly's Triple bypass surgery is set for Friday morning at 8:00 AM providing there aren't any complications or emergency surgeries that would cause the schedule to be changed.  He is resting and getting stronger so that he will be strong enough to withstand the surgery.  He can have visitors and will be able to have visitors again on Sunday.    Please keep him in your thoughts and prayers.
2.  John Bradfield - September 11, 2007.  I learned this afternoon  that our beloved SK John Bradfield passed away peacefully in his sleep last night.
    John was currently the Grand Representative to Iowa and AP with AM Nadine Barrett.  John was RP in 1997 with Esther Auld, under GRM Gayle Norberg and GRP Don Carlton.
1998 he was RP with Jeane Cubley, under GRM Nancy Jane Burgin and GRP Cory Hedges
2001 he was RP with Esther Auld, under GRM Cathy Groff & GRP Dennis Bippes
2003 he was RP with Jeane Cubley under GRM Jennifer McGilvery & GRP Merle Smith
    John came to Jewel of the Valley from Oregon where he and his late wife Irene, had served for many years.  He was a life member of Cherry Ct in Oregon and a dual member from Hanna Rosa Ct, Salem Oregon.  He was always a gentleman and a wonderful, valued member, always with a pleasant greeting and willingness to assist our Court in any way possible.  He will be tremendously missed!.  His daughter, Carole Folsom is Treasurer of our Court.

3.  JoAnn Houston -  I just got off of the phone with Joann Houston, and the operation for her back is scheduled for Monday the 17th.  I'll let you know Mon. night how things go.  It will be an op. of nearly 4 hours, at the Capitol Med. Ctr.in Olympia, on the west side of the city, near the mall.   Karin Lawson will know much more about the address than I do, if people want to send cards to the hospital.  She will stay in Olympia about 2 weeks, with most of it at a nursing home.  Please ask people to pray for a perfect healing.  Thanks

1. Woody Esterly
    Hello all,  Well the surgery is done.  He had a 4 way-Quadruple bypass.  The Surgeon was real pleased with the surgery.  He was not able to do the remodel that I let some of you know about since the enlargement or swelling of the heart was all acute meaning that it had happened all in the last couple weeks.  The hope is that now the bypasses will allow the blood to reinfuse the heart better with blood and oxygen and the edema (swelling) will go down on its own.  He had 2 liters total of fluid in the chest in the lower left and right sides.  They started the surgery at 8:10AM and were closing at 12:15 PM.  I spoke to the Surgeon at 1:00.  at 2:00 he was back in his room.  The breathing tube is still in and the machine is breathing for him at this time to assist him in staying quiet.  If he was breathing on his own he also might not be getting enough oxygen and his heart would be working too hard.  This isn't "normal" but it's precautionary for him.  They are not going to rush into removing it so that he stays quiet as long as possible.  His blood #'s were down so they gave him 2 units of blood this evening and the #'s went from 24.2 when he came out of surgery to 38.9.  Normal is around 40.  Sorry I can't be more specific about the name of it.  His EF-Evacuation Fraction-(The amount of blood leaving the heart with each pump) was at 20-25% prior to surgery and was basically the same after.  At this point the nurse indicated that she had gotten it up to about 30 at this point.  His oxygen is good, He still on an IV drip of insulin but that is normal for post surgery.  He is running a little bit of a fever but again that is normal.  His temporary pacesetter has his heart beating at 84 BPM which is up from his presurgery count.  His chest tubes are good--no oozing or bleeding .  His urine output is good.  The Surgeon said that he had a go od assistant that "harvested" the veins from his legs and he has a couple of small cuts on the thighs.    So at this point it's a wait and see situation as to how soon he will be up and going.  He's probably not going to be out of the hospital before Wednesday at the earliest now.  He is still in need of your prayers and I will call anyone back who calls or feel free to come and visit.  I'll be in the waiting room area or when he is awake I'll be there.  --If you come to visit--Woody's legal name is Wilson.  Call 253-403-1060 and check to see if he is ready for visitors.  You'll get the CICU nurses desk.

1.  Woody Esterly is holding his own.  He is still on the ventilator to make sure he is getting enough oxygen. He has a feeding tube now to receive nourishment.  The Dr's say he is one sick person and his heart was weak going into surgery because of the heart attack prior to the surgery.    H.L. Diana also needs our good thoughts as she is at the hospital everyday and getting tired. The renal Doctor will decide whether he needs dialysis process.  His recovery is a slow and arduous process.  Diana is trying to be positive. They can both use cards.
2.  Joanne Houston  Grays Harbor Ct.had back surgery this morning.  It was not as extensive as they had thought it would be.  She is in hospital in Olympia and will be there at least a week and then rehab.  So send cards in care of Karin Lawson, 395 W. 3.  S.K. Everett Slighter, PRP Golden Light Ct.  just received this information that he was taken to emergency At Godd Sam  and that they are keeping him overnight for observation.  He had been running a fever and throwing up.  They hope to releave him in the morning.     I wanted to send you some good news!
    First a reminder that Friday night Sept. 21st  is Golden Light's O.V. and Karen Ekrem's "chosen one" will be announced. There is a dinner before the meeting.
    H.L. Joanne Houston is up and off the morphine drip.  She will move in a few days to a rehab/nursing home for recouperation from the back surgery.

    Also good news is that several courts have initiated or are initiating new members to Amaranth. Canal ct., Richmond Ct., Lakewood ct. and Mt. View ct. this week.  Keep up the good work.

A visit with the Pat & Ron Amdahl ...
    NOTE:  Pat & Ron are off touring the United States!  She writes wonderful emails so am sharing some with you.  Pat and Ron are from Poulsbo Chapter and she was Grand Martha last year ...
    We are back amongst the living.  Being without a cell connection or e-mail has been a real hard thing to live with. We were in the Nachez Trace area of TN and it was absolutely beautiful but we were 2 hours from Nashville and that was different.  We didn't see many deer which we were surprised. 
    The weather was wonderful, but couldn't go swimming as all the pools so far closed right after Labor Day.  It has been in the high 80's and low 90's with the evenings getting cooler but not bad at all so far.  I could live here as it is very beautiful and the cost of living is reasonable if you like lots of acreage to mow.
They raise some beautiful horses here and the crops are soybeans, cotton and tobacco in some parts.
    We toured the Jack Daniels plant and that was really interesting.  It is not the longest running but the oldest still running.  It was closed during the depression and the folks that work there are there for 30-40 yrs. and families work there.
    We are now in Knoxville until Sunday and then will head to Virginia before going south.
    The engraver has been working great and we finally got everything all caught up so we have a few days to play.
    Last week Ron's sister and her husband were with us and we had such a good time.

    Good morning Connie,  I have a favor to ask.
The invitation I mailed out to the Chapters in King, Snohomish and Pierce Counties as well as the Grand Officers stated that the OV at Nesika is on October 17.  WRONG!  IT IS OCTOBER 12.  (There is still a donation dinner at 6 PM before the OV).

George Washington's Hair ...
Brethren: 
            The Grand Lodge of Massachusetts does indeed have a lock of Brother George Washington’s hair and it is still kept in a small urn.  This item is taken out only once per year and used in the parade of Grand Lodge Officers during the Installation of Grand Lodge Officers, immediately before the Annual Feast of St. John the Evangelist.  This ceremony is open to all Masons in good standing.  It is held on December 27 of each year (except in years when that day falls on a Sunday, in which case, it would be on Monday), to coincide with that same observance (St. John the Evangelist Day) in the religious calendar.  To witness the ceremony, due to space restrictions, you must buy a ticket to the Feast held that evening, which costs $25.00.  Due to a contract with the estate of George Washington, the Grand Lodge is not permitted to loan the hair or to even allow it to leave the building.

  • HINT 1:  Here's a great hint next time you are nailing something: Before you start hammering, poke the tip of the nail through some cardboard.  Hold the cardboard instead of the nail to keep your fingers from getting  whacked with the hammer. Pretty clever, uh?

  • HINT 2 - Try sliding some cardboard squares under your washing machine's feet to eliminate some of the vibration.

  • HINT 3 - Don't throw away your old shower curtains they make great covers for outdoor items in the winter (such as chairs, patio tables, grills etc.)

  • HINT 4 - To achieve fresher air in the house without paying a fortune for canned spray, squeeze a few drops of a fresh lemon into the dust bag of your vacuum.

Campbell's Cheesy Chicken & Rice Casserole
from Campbell's Kitchen

1 can (10 3/4 oz.) Campbell's(R) Condensed Cream of Chicken Soup (regular or 98% Fat Free)
1 1/3 cups water
3/4 cup uncooked regular long-grain white rice
2 cups fresh or frozen vegetables
1/2 tsp. onion powder
4 skinless, boneless chicken breast halves
1/2 cup shredded Cheddar cheese

Directions:   Stir the soup, water, rice, vegetables and onion powder in a 12 x 8” shallow baking dish.  Top with chicken. Season chicken as desired. Cover.  Bake at 375 degrees F. for 45 min. or until done. Top with cheese. Serves 6.
 TIP: Italian: In place of onion powder, use 1 tsp. Italian seasoning. Substitute 1/3 cup shredded Parmesan for Cheddar.
 Mexican: In place of onion powder, use 1 tsp. chili powder. Substitute Mexican cheese blend for Cheddar.

2 tsp. cornstarch
1 1/2 cups Swanson(R) Chicken Broth (regular, Natural Goodness(TM) OR Certified Organic)
2 tbsp. low-sodium soy sauce
2 tsp. lemon juice
2 tsp. fresh grated ginger OR 1/2 tsp. ground ginger
2 tbsp. vegetable oil
1 lb. skinless, boneless chicken breasts, cut into strips
4 cups broccoli flowerets
2 medium carrots, sliced (about 1 cup)
1 small onion, chopped (about 1/4 cup)
1/4 cup chopped fresh cilantro OR parsley leaves
3 cups hot cooked regular brown rice (optional)
 

Directions:  MIX cornstarch, broth, soy sauce, lemon juice and ginger until smooth. Set aside.  HEAT 1 tbsp. oil in medium skillet over medium-high heat. Add chicken and stir-fry until browned and done. Remove chicken. HEAT remaining oil over medium heat. Add broccoli, carrots and onion and stir-fry until tender-crisp. STIR cornstarch mixture and add. Cook until mixture boils and thickens, stirring constantly. Return chicken to skillet and heat through. Sprinkle with cilantro. Serve over rice, if desired. Serves 4.
** Savory Vegetables:  Simply cooking vegetables in Swanson(R) broth instead of water enhances both their flavor and their taste.

Mesa Grill's Blue Corn Muffins

2 ounces (1/2 stick) unsalted butter
3 Tablespoons onion, finely diced
1 clove garlic, finely chopped
1/2 cup milk
2 large eggs
1/4 cup red bell pepper, finely diced
1 jalapeño pepper, finely diced
1/4 cup fresh or frozen corn, thawed
1 Tablespoon cilantro leaves, finely chopped
3/4 cup blue cornmeal (can substitute yellow)
1/2 cup all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 Tablespoon granulated sugar
Set a rack in the middle of the oven and preheat to 400°F. Grease a 6-slot muffin pan with non-stick vegetable spray.

    In a small saucepan, melt the butter. Add the onions and garlic and cook until soft.   In a large mixing bowl, whisk together the milk, eggs, bell pepper,
jalapeño, corn and cilantro. Whisk in the butter mixture. In a separate bowl, stir together the cornmeal, flour, baking powder, soda, salt and sugar. Mix into the liquid mixture.   Divide the batter evenly among the muffins slots and bake for 16 minutes or until set, turning the pan once for even baking.  
** Bobby's Tip When these muffins are day-old they are great for stuffing.

Baked Potato Soup
 

1/2 cup chopped onion
1/2 cup chopped celery
1 tablespoon margarine
4 cups half-and-half
1-1/2 teaspoons salt
1-1/2 teaspoons pepper
2 tablespoons margarine
3 tablespoons flour
2 large potatoes, baked, peeled, cut into 3/4-inch cubes
1 cup shredded Cheddar cheese
1/2 cup bacon bits
1/2 cup sour cream
Chopped fresh chives to taste

TO PREPARE:  Sauté the onion and celery in 1 tablespoon margarine in a sauté pan until tender.   Combine the onion mixture, half-and-half, salt and pepper in a large saucepan; mix well. Heat to the boiling point, stirring occasionally. Heat 2 tablespoons margarine in a saucepan until melted. Whisk in the flour. Cook for 3 minutes or until of roux consistency, whisking constantly. Whisk into the half-and-half mixture. Cook until thickened, stirring constantly. Add the potatoes; mix well. Cook just until the potatoes are heated through, stirring frequently. Ladle into soup bowls. Top each serving with Cheddar cheese, bacon bits, sour cream and chives. SERVES: 8

Angel Hair Soufflé

4 ounces angel hair pasta
8 egg whites
6 egg yolks
3/4 cup freshly-grated Parmesan cheese
3/4 cup prosciutto ham, finely diced (see note)
1/2 teaspoon freshly-ground black pepper
1/8 teaspoon red pepper sauce

TO PREPARE:  Preheat oven to 375 degrees. Grease a 2-quart soufflé dish. Cook and drain pasta according to package directions. In a large mixing bowl, beat 6 egg yolks with electric mixer until thick and lemon colored, approximately 5 minutes. (This may also be done in a food processor.) Stir in Parmesan cheese, ham,
pepper, red pepper sauce and cooked pasta. In another mixing bowl, beat 8 egg whites until soft peaks form. Fold about 1/2 cup of whites into yolk mixture to lighten it, then fold yolk mixture carefully into whites, using a rubber spatula and being careful not to over mix. Pour mixture into a prepared soufflé dish. Smooth the top, then draw a circle with your finger or a knife on top of soufflé about 2 inches from rim of dish. This causes the center to rise higher than
sides and forms a cap. Bake at 375 degrees for 20 to 25 minutes.

NOTE: Domestic or imported prosciutto is available at specialty markets and delicatessens. Boiled ham may be substituted. SERVES: 4

Fudge Cake

1-3/4 sticks butter
4 ounces bitter chocolate
4 eggs
2 cups sugar
1 teaspoon vanilla
1 cup all-purpose flour
2 cups pecans

TO PREPARE:  Grease and line two 8-inch layer cake pans. Set oven at 350 degrees. Melt chocolate and butter over steam in top of double boiler. When
cool, add sugar, vanilla and eggs beaten together. (Do not use mixer.) Do not reheat after combining these. Dredge pecans in flour and add last. Pour into prepared cake pans. Put a pan of water in oven while baking. Bake about 30 to 40 minutes.  Let cake get cold before removing from pan.

Icing for Fudge Cake:
1 to 2 boxes of powdered sugar
2 tablespoons cocoa
1/4 cup butter
1 cup Evaporated milk
1 teaspoon vanilla
1 cup pecans

Mix 1 box of sugar and cocoa. Cream in butter. Add milk and vanilla, a little at a time until really thick. If more sugar is needed to achieve this, add it. Spread on cake and add pecans. Put in refrigerator for 24 hours before cutting.
Note: You probably will not use the full cup of Evaporated milk.   SERVES: 8
