HOUSE FOR RENT

Come inspect this house, my feathered friend

You need no more of your energy spend.

Look it through

It is new

Made especially for you,

That your season's travels might end.

It is sturdy and painted as bright as your breast,

I have used good materials, only the very vest

And the view

For you two

As your work you do pursue

'Tis a wonderful place for your nest.

I am the owner, but the rent is free,

For I'm paid in the joy that you furnish me.

So come along

As you chirp a song.

This house won't be empty long

When it's noticed near the apple tree.

-- Arline Ogletree (Sedro Woolley, WA)

Carrot Mushroom Pilaf

4 tablespoons plus 4 tablespoons unsalted butter
1 bunch green onions, chopped
3 medium carrots, peeled and chopped
2 cups raw brown rice
4-1/2 cups chicken broth
1/2 cup dry white wine
2 cloves garlic, minced
8 ounces fresh mushrooms, sliced
3/4 cup chopped fresh parsley
1/4 teaspoon freshly ground pepper
4 ounces Parmesan cheese, freshly grated (1 cup)
2 large eggs, beaten
1 cup half and half
1/2 teaspoon nutmeg
1/4 cup chopped green onion

TO PREPARE: Lightly grease an 8 by 12-inch baking dish. Melt 4 tablespoons butter in a large skillet. Add green onions and carrots. Sauté until tender, about 5 minutes. Add rice and cook 1 minute, stirring constantly. Stir in chicken broth and wine. Bring to a boil. Cover. Reduce heat and simmer 45 minutes, or until liquid is absorbed. Set aside.
Preheat oven to 350 degrees. Melt remaining 4 tablespoons butter in a separate small skillet. Add garlic and cook 1 minute. Stir in mushrooms and cook 5 minutes. Drain. Stir in parsley and pepper. Spread half of rice mixture in bottom of prepared baking dish. Spread mushroom mixture over rice, then sprinkle with 1/2 cup Parmesan. Top with remaining rice mixture and sprinkle with remaining 1/2 cup Parmesan. Thoroughly mix eggs, half and half, and nutmeg. Pour over rice. Bake 30 minutes, or until thoroughly heated. Garnish with green onions.

Becca's Breakfast Sandwich
I just love this yummy sandwich that my husband makes for me on Sundays! The gruyere and sundried tomatoes make it so tasty, and a perfect way to start out the day. If I eat this sandwich at 11, I am not hungry till dinner. But my favorite thing about Becca's Breakfast sandwich? It would have to be the smile on my husband's face when he sees me enjoying every delicious bite!

2 slices Rhodes White Bread, baked ahead following package instructions
1-2 strips bacon
2 sun dried tomatoes, packed in oil
1-2 eggs
1 teaspoon sour cream
salt and pepper
2 thin slices Gruyere cheese
butter

Directions:  Slice bread and set aside. Cut bacon into 1/4-inch strips and fry in a small frying pan on medium low. Cut the sun dried tomatoes into 1/4-inch strips and place in another pan on medium low. Allow to heat for 1 minute then add eggs and sour cream to the pan. Season with salt & pepper and gently scramble. Place one slice of cheese over eggs. Begin toasting sliced bread. Drain bacon strips on a paper towel. Butter toast and place half of the bacon and the eggs, cheese side down on one slice. Top eggs with remaining bacon and second slice of cheese. Place remaining slice of toast on top.

JOKES

The child was a typical four-year-old girl -- cute, inquisitive, bright as a new penny. When she expressed difficulty in grasping the concept of marriage, her father decided to pull out his wedding photo album, thinking visual images would help. One page after another, he pointed out the bride arriving at the church,
the entrance, the wedding ceremony, the recessional, the reception, etc.
"Now do you understand?" he asked.
"I think so," she said, "is that when mommy came to work for us?"

AND A WORD FROM YOURS TRULY

Again -- no time to chit chat!  Hope that you have a marvelous weekend!  It has the promise of a beautiful day ... except I see a bit of pink sky.  What is it?  Pink sky at night ... sailors delight!  Pink sky in the morning?  Sailors take warning!
You notice that there are a few more reminders?  I received Ode Cards this week from Carole Fisher (Grand Coulee Dam Chapter) and Kay Johnson (Nesika Chapter).
Remember ... If you send them via attachment, that is fine!  Saves on the postage.  YIKES!  It went up another 2 cents.  Sure makes emails a lot more pleasant, huh!

Until next time ... Hearty Patriot Hugs and happy thoughts.
